What Is Alpha-Gal Syndrome?
Alpha-Gal Syndrome, sometimes called alpha-gal allergy, red meat allergy, or tick-bite meat allergy, is an unusual food allergy that can develop following certain tick bites. AGS is an allergic reaction to a carbohydrate called galactose-alpha-1,3-galactose, commonly shortened to alpha-gal.
Alpha-gal occurs naturally in most mammals, including cows, pigs, sheep, and deer, but it is not naturally produced by humans. In the United States, Alpha-Gal Syndrome is most commonly associated with the Lone Star tick. After certain tick bites, the immune system may begin producing IgE antibodies against alpha-gal. Later exposure to foods or other products containing alpha-gal can trigger an allergic reaction.
Unlike many food allergies that cause symptoms within minutes, Alpha-Gal reactions are often delayed by several hours, making the connection between food and symptoms much harder to recognize.
Could Your Symptoms Be Alpha-Gal?
Symptoms vary considerably from person to person, and a reaction may also be different from one exposure to another. Alpha-Gal reactions commonly occur approximately 2–6 hours after exposure and may include:
- Hives, itching, or skin rash
- Swelling of the lips, tongue, throat, or eyelids
- Abdominal pain or cramping
- Nausea, vomiting, or diarrhea
- Heartburn or indigestion
- Coughing or shortness of breath
- Dizziness or a drop in blood pressure
- Severe allergic reactions (anaphylaxis)

Foods and Products That May Trigger Alpha-Gal
For many people with Alpha-Gal Syndrome, the primary triggers are foods derived from mammals, including beef, pork, lamb, venison, and rabbit. Some people may also react to dairy products, gelatin, mammalian fats, or ingredients derived from mammals.
Alpha-gal may also be present in certain medications, supplements, medical products, or vaccines. Sensitivity varies significantly, so not every person with Alpha-Gal needs to avoid every potential source.
